Eat The Rainbow Chia N Oats Breakfast Bowl

Overnight Oats

Chia Pudding

  • 4 tbs chia seeds

  • 1 cup coconut milk

  • 1 tbs maple syrup 

Colorful Additions

  • PURPLE CHIA💜- 1/8 tsp blue spirulina, 1/8 tsp pink pitaya powder

  • BLUE CHIA💙- 1/2 tsp blue spirulina 

  • LIGHT BLUE CHIA💙- 1/8 tsp blue spirulina 

  • GREEN CHIA💚-1 tsp barley greens powder

  • YELLOW CHIA💛- 2 tbs mango purée 

  • ORANGE CHIA🧡- 1/2 tsp carrot powder

  • RED CHIA❤️- 1 tsp beetroot powder 


Directions 

1. For the overnight oats, combine all ingredients into a serving bowl and mix thoroughly. Refrigerate for an hr or overnight if you wish. 

2. For the chia. Combine the chia, coconut milk, vanilla and maple syrup into a bowl and whisk thoroughly. Let stand for 5 min then whisk again to remove any lumps. Refrigerate for 2 hrs or overnight as well. 

3. ONCE both the oats and chia are set remove both from the fridge. Divide the chia into 6 portions and add the all natural color powders to wash one. Add the chia on top of your overnight oats into whatever rainbow pattern you think is fun and ENJOY!! This would be sooo fun to do with your kids and a nutritious, bright, colorful brekky that everyone can enjoy. Have fun you guys! We only have one life. LOVE it right!!
